Mira's fictional path moves from a family kitchen in Lucknow to coastal canteens, hotel brigades and long seasons studying fermentation. Each place leaves a technique, never a costume.
The imagined Mehrauli room opens in 2018 around a stone counter. Its menu changes weekly, but the grammar stays: spice roasted whole, acid used brightly and vegetables given centre stage.
